THE DRAGON TREE the Cape Red
Pinotage & Cabernet Sauvignon.

Dragon Tree will always be a work in progress for that Holy Grail, The Cape red. There is no formula for this wine – we don’t really believe in formulas. Climate is variable and our winemaking is all about truly representing vintage differences. What does remain the same are the main varieties we use – Pinotage & Cabernet Sauvignon.

Wherever this wine takes us, it will be draped in South African colours. The unmistakable Pinotage aromas and flavours are only a small portion of its specific home character. We focus a lot on creating a South African-specific tannin feel by using an old Cape selection of Cab and picking the little beauties when they are completely and utterly ripe.

The wine takes its name from a Dragon Tree given to the Port Captain of Cape Town, by a passing ship's captain over 100 years ago which grows above our barrel maturation cellar. Originally from the Canary Islands this tree has blood red sap. Legend tells of a wicked Dragon who sat at the Pillars of Hercules and blasted ships with lashings of fire as they sailed past. Eventually she was mortally wounded and flew forlornly off to sea to die. Only where her blood landed on earth (on a few remote islands and around the edge of the Mediterranean) do Dragon Trees grow.


Dragon Tree 2003

Tasting Description: Intriguing ruby edge to a dark, enticing red colour. On the Nose - cacophony of summer fruit, under laid by decadent plum, blackberry and cassis. The fruit on the palate is framed by spicy wood with a touch of vanilla, fennel and new Ferrari leather seats.

Food Paring Suggestion: Stir-fried strips of ginger beef.

Dragon Tree 2002
Tasting Description:
Incredibly dense, dark red colour. On the nose, intense wild red berry jumps out of the glass. This is backed up by toasty and spicy ripe plum and blackcurrant. The palate is as intriguing as it is balanced with loads of character. Youngberry, vanilla, chocolate chip muffin, cloves, toffee and just a hint of hedonistic animal magnetism.

Blend consists of the following components:
* 54% Pinotage
* 46% Cabernet Sauvignon

Vinification:
The grapes get stored in a cold room overnight after which it get crushed the next day. 20% are left as whole berries. Cold maceration on the skins take place for 1 – 2 weeks, after which fermentation takes place in open top fermenters. Punch downs are done every 4 hours to extract colour and flavour. Pressing follows and aging in American Oak barrels – 40% new, 30% 2nd fill, and the rest 3rd fill and older. Malolactic fermentation takes place in the barrel. Racking for the first time after 6 – 8 months – thus extended contact with lees. Fermentation by a variety of yeasts as well as wild ferments. 2002 was produced at the V&A Waterfront where the Flagstone cellar used to be and aged in barrels in a 100 year old tunnel on the premises.
