At Flagstone we aim to make wine that respects our 350 year old winemaking heritage, while always celebrating the magnificence of nature. We want to make gorgeous wines that stimulate your brain as much as they please your taste buds.
This wine is made from 100% Sauvignon Blanc grapes from a vineyard on the slopes of the Simonsberg Mountain in Stellenbosch. At around 20° Balling, the peduncles of each bunch were pinched with a pair of pliers. This action prevents water from reaching the grape bunches, consequently dehydrating the bunches. This leads to the concentration of sugar, acid and flavours inside each berry.
The grapes were harvested at around 38 ° Balling mid March. At the winery, the grapes were chilled to 3-5 °C and whole bunch crushed into the press for a 24h soaking period. The grapes were then pressed and the sweet, concentrated juice was left to settle in a tank. After alcoholic fermentation started, the fermenting juice were transferred to 4 x 225L (75% American & 25% French oak) barrels until fermentation was completed after 3 weeks.
